A Savory Caribbean Delight
INGREDIENTS
- Yuca root
- Carrots
- Eggs
- Salted cod fillets
- Green onions
- 2-4 tbs olive oil
- 2-3 minced garlic
INSTRUCTIONS
- Hard boil eggs, about 7-9 minutes, peel and cut in slices.
- Boil carrots, yuca, and salted cod fillets until soft. Cut to desired bite size.
- Pan sauté olive oil and garlic.
- Mixed 2 and 3.
- Top with hard boiled egg slices.
- Garnish with green onions.
- Eat!
