Sweet Potato Orange Cup

2 large sweet potatoes, peeled and chopped
¼ cup freshly squeezed or cold-pressed orange juice (you can use the juice from the oranges you use as cups!)
2 teaspoons Primal Palate pumpkin pie spice
½ teaspoon ground cloves
1 tablespoon maple syrup
1 tablespoon Tin Star brown butter ghee
2 teaspoons salt
pepper, to taste
4 orange cups, juiced and emptied
Juice oranges and set juice aside.
With a steak knife or grapefruit spoon, gently scrape the insides of the oranges out, being careful not to puncture a hole.
Peel sweet potatoes, chop and boil until fork tender.
Drain potatoes and mash with a potato masher or fork. Don’t worry about mashing completely as you will be blending more once the remaining ingredients are added.
Add remaining ingredients, other than orange shells and use a hand mixer to combine until smooth.
Carefully scoop mixture into your orange cups and sprinkle with a bit of Primal Palate pumpkin pie spice.
Serve immediately or refrigerate and reheat in an oven.
This recipe is vegetarian, gluten-free, low fat and delicious!
If you like a higher protein content/ratio, you may add to your protein of choice side dish for a balanced meal.
